My 80 series failed it's MOT today because the ABS warning light is
illuminated. Obviously I've known about the problem for some time and had
assumed a faulty sensor or something similar.
I'd be interested to know whether anybody has encountered this problem
before. What was the cause and what was the fix?

Haven't had the problem, but heard of others who have had intermittant
fault codes.
Two methods:
1
Get the fault code read. Might tell you what the problem is.
2
Clear the light (the manual ought to tell how, at least the 100-book does)
and it might be OK. If it comes back, see point one, or: One possible
cause is dirt on the rotation sensor at one of the wheels.

I'd also imagine that the ABS will default to a standard braking
system in the event of a failure, so braking efficiency / pressures
are nothing to do wil ABS. Plenty of cars don't have it and pass an MOT.

It's simply a part of the MOT test - if ABS is a standard fitment for the
vehicle then it has to be fitted and fully working. You can't even just take
the bulb out, the test will include checking for the warning lamp working.

I have had that problem. Mine had several faults, the bulk of which were cured by replacing a faulty relay.
Jon Wildsmith has scanned and made available the Toyota Service Manuals. If you download RM315E it covers ABS.

The ABS problem could be down to a multitude of things.
Working through the manual will help resolve it, however as a starting point...
Pull the ABS fuse from the fuse box in the engine bay on the passenger side - this should clear the error.
Remove the sensors from each wheel and clean them off, making sure there is no build up of metal filings on them. The front sensors will be covered in grease, this is normal, the back ones can be cleaned thoroughly.
Trace back the wiring from the sensors and check each connection in the wiring loom making sure the contacts are clean and dry.
Those are the basic checks, you will really need to work through the diagnostic steps in the manual to pin the problem down.

Would it not be a better idea to check what the system is complaining about
before clearing the error codes? It only takes a couple of minutes. If it
is an intermittent fault, airgap for example, there is nothing to say the
light won't come on again on the way back to the MOT station.

True, although the error codes can stack up over time with the system storing codes that are irrelevant to the current problem.
I guess I should have said, check the codes and then clear them and then if/when it comes on again check the codes again
