Thanks Ash, getting closer to a solution how to sort this out. What's a good way to find a good chassis ? It seems all the rest would be mostly replaced one way or another - I'm looking to spend around 1-3k to get something that has a solid chassis and very good undercarriage.

Or maybe 6 series ? Are they in order as price varies ? FJ62 looks pretty awesome, would that be a cheaper option ?

I'm pretty sure I've seen Australian customized ones that were V8 and were 7 series but could be very wrong here. Which series would have a v8 engine and been around for long enough so I could find a cheap one to restore to my needs rather than investing into something more expensive ?

Maybe an 80 would do, V8 is definitely a must, just can't seem to find any pages to look for one. Any suggestions ? If I wanted a left hand drive where do I need to look? Australia ?
