I have a 2012, 79 series LandCruiser that has a knock in the rear when cornering in the wet. Could it be a knock from the leaf springs when they are wet? A mate of mine has a 2012, 76 series that has the same issue, has anyone noticed this in their 70 series after rain?

Yes, and the shackles (if they're not included in the above).
"rocking shackles" can account for all sorts of strange behavior as well as noises at the back end. I had a broken shackle for ages on the back at one time, didn't notice it at all for ages, but it did explain the weird handling sensations I was having
