Spain tracks and French Route?

Morning all
Getting ready for the summer trip to Spain and couple of quick questions:
1. Anyone know what is the best way to see the non-tarmac tracks available in Spain, specifically north coast? Specific hard copy maps or apps or some such?
2. Anyone got recommendations for route through France to San Sebastian and any nice campsites in France along that route?
