Very nice looking piece of kit. You would struggle though for storage but a USB disk or key could help out there.

Mounting it could be interesting though.

The 16GB SSD drive may be an upgreadable unit if you take it apart and see what's in there, it was on my Asus T91 which I upgraded to 64GB, wasn't cheap though.

having a quick look at the specs, it has a card reader so you could just leave a 16 or 32 in and also upgradeable memory so chances are, you could shoe horn something in there.

On my Asus I went 2GB on the main memory, 64GB on the SSD and 32GB on the main SD which still leaves a 2nd SD slot free and a couple of USB ports so it's not short of storage Also runs off 12v so an ordinary M1-ATX PSU is a perfect in car PSU & charger. A lot of these devices have similar setups so the one you've linked to may be as flexible and has a faster processor (but no keyboard).
