Different oil temperature

Probably been asked a million times on what oil to put in our cars but this manual confuses me a bit.
How is it that 5w30 in the 1kd-ftv engine can handle much higher temperatures then the 1kz-te as shown in the picture?

Personally i was looking at getting 10w30 because it doesnt get colder then -18C here but in summer its around +25C. But 10w30 seems a bit hard to find. Many people recommend 10w40.

But if 5w30 can handle all those temperatures im just gonna get that...confusing

That should be fine for your climate. I use 15W-40 in mind but it rarely gets colder than 10degC here.

Ive put in 10w40 castrol magnatech. Heard people are happy with that one.
I do overfilled it a tiny bit. Its about 2mm above the MAX mark.
Not sure if i should get it out. Ive read that if its that little i shouldnt worry about it.
i could just remove the oil filter and install it again.
 
Just 2mm over will be perfectly fine. It'll get used up soon enough in these older motors!
