Remote switch

Think of the controls for boats with outboard motors and controls at
the front of them - they usually have two controls, one for
forward/reverse and one for acceleration.
You basically want to mimic the forward/reverse setup what switches the
lever on the outboard between forward-neutral-reverse.
All you need it a rotary switch with a lever or wheel on it and then
the cable setup above.

Try your local Model shop. Model aircraft use a nylon sheaved rod system you
can both pull and push. With very little expansion or compression.
