That sounds pretty fair to me, and don't despair - as I said before I've
had a new head crack during the installation process, so that is
entirely possible.
By the sound of it a lot of gas from a cylinder is getting directly into
the coolant, so there must be a sizeable crack somewhere that should be
evident to the naked eye. I've only ever seen cracks in a cylinder
head, which were around the valves and were very obvious - they showed
up as black lines on an otherwise clean surface.
The normal method of detecting cracks not visible to the naked eye
(without resorting to ultrasound or X-rays) is to spray on a dye
penetrant, wipe clean, and inspect for dye left in cracks - usually with
ultra-violet light, but there are some visible light products too. You

It's quite likely that the shop has some dye penetrant, which comes in a
spray can, or they may know where to get hold of some. I've never had
to buy any since it came courtesy of work, but I can probably identify a
supplier for you if you need it.
However from the amount of gas escaping I'm pretty sure it will show up
to the naked eye either in the cylinder bore or in the head.
Also you need to put a steel straight edge (ruler) on both the block and
the head mating surfaces. They should both be absolutely flat to within
the specified tolerance. I don't have that figure for the petrol
engine, but for the diesel it is 0.2mm according to Mr Haynes. You
should not be able to get a feeler gauge thicker than that between
straight edge and block/head anywhere. If you haven't got a feeler
gauge 0.2mm is roughly the thickness of a sheet of 80 gram (standard) A4
paper.
